I've had my mind set on the 27" i5, but the more I think about it, the less I'm sure I need it. Here are my basic needs:

iphoto
imovie
garageband
some basic photoshop work
pixelmator, etc
rapidweaver
web
office...etc.

no gaming at all.

So, what do you folks think?...all I know is that anything will be better than the iBook G4 (10.4) I'm currently using. I'm just wondering if tacking on an extra 700ish bucks is worth it over the 21" i3 or i5. How much futureproofing does the 27" get me? Is it worth it? Clearly (as can be seen from my G4), I have a habit of hanging on to my gadgets far too long. What are the other (maybe not-so-obvious) perks of bumping up to the 27"?

The 27 inch 3.2 GHz i3 should be sufficient for your needs. Take any extra money and use it the bump the system RAM from a non-Apple company.
 
I was debating like you. I went to the Apple Store to look again between the 21" and the 27". Talked to Sales guys about I5 and I7 but the impulse buy was when he said they had the 27" I7's in stock.. so i bought it. It is fantastic. the pictures are beautiful. You don't need the 27" but it is a beautiful want that you will not regret if it fits on your desk.
 
The 27" is great for any photo-related work. There's enough room to get a good overview of the picture you're working with as well as all control panels.

IMO you should get the 27".
 
Just in everyday use like browsing the web I can drag my weather and webcam widgets to the desktop level (using dashit) and have them and also my e-mail off to the side ..
