Now that it's clear AT&T (or any other carrier) isn't going to be supporting eSIM at launch, and the new iPad Pro doesn't include an Apple Sim do I need to go get a new nano SIM card to use the cellular connection on an iPad Pro in the US? This page makes me think that I do:

https://www.apple.com/ipad/cellular/

This seems like a bit of a step in the wrong direction in terms of user experience, as I seem to remember setting up my Air 2 was wonderfully brief and didn't require a trip to a carrier store.
