To make a long story short, I am getting the iPhone 12 Pro (upgrading from 8Plus), and wanted to know if I needed to re pair each of the airtags with my new phone or when I transfer via the quick set, the settings transfer over?

they should be paired to your apple account. meaning they'll transfer to the new phone, even if all you did is sign in with no setting transfer
I see my devices on my iPad, even though I paired them with my phone. Obviously no precise finding, since the iPad doesn't have the U1. But I can make them beep from the iPad.
