So as you guys know, iOS 10 JB beta is out, so I wanna jailbreak that beta, but if the stable one come out, do I have to restore iphone to jailbreak the stable version? or, it will overwrite so that I dont need to restore iPhone.

So do that also mean I can overwrite the current beta jailbreak with the stable one ?No, you cannot restore to anything that Apple doesn't sign.
The only version signed by Apple right now is 10.2
