I know most computers slow down once you get down to a few gigs left, but do iPhones do the same? I filled up 2 iPod touches and noticed no slowdowns.
 
Yes, it will. And that basically is how current NAND flash memory works.
Speaking of which, I do not leave enough space on my iPhone uh.

Yes they do because filling it up, you leave very little space for wear levelling and trim. It is slower to write to blocks that already has data on it.

Haven’t noticed a great deal of slowdown on any of my iphones only older models
 
Yes, Do not fill it to 100%. I have done so, and I have noticed major slowdowns, that I have just come to accept as part of using the phone. Deleted some stuff, and the thing flies.
