I am thinking of ordering a new iMac this week, it doesn’t ship until end of November, I am just wondering would it ship with Big Sur or would Monterey come pre-installed?

Do spec’d out macs come with the latest MacOS installed or what was available when it launched?

Buying direct from Apple, generally speaking the latest OS or within a point update or two. Buying from a reseller, really depends on the machine and volume. I've bought from B&H in the past with previous major OS installed upon first turning machine on.
