Interested in buying an unlocked iPhone X from Apple. I know an android some carriers do not enable wifi calling on phones that aren't branded specifically for that carrier. Is this true on the iPhone as well? If I buy a sim-free card directly from apple can I use wifi calling on T-Mobile/Verizon/AT&T/Sprint?
 
Apple doesn't allow carriers to alter the OS so WiFi calling should be enabled on all iphones for all carriers who provide the service.

I am not saying carriers do it, but I believe they can on a customer level turn it on or off. I have had to call into AT&T when replacing my phone for them to enable it on my new phones. It might be that because the account was still tied to the old phone, but it leads me to believe they have some control on their end. I may be wrong on this, I am just assuming it.

But not the AT&T/TFW version of StraightTalk, right?
its the att version of straighttalk i turn it off at the moment.bought my iphone X at the apple store paid in full and the verizon version but its unlock.heres the screenshot

Turn it on and show me the screenshot.
you can clearly see it in the photo attached.prior to ios 11.2 is not there my carrier version is TFW 31.1 if that matters.i dont want to turn it on at the moment it will tell you that if you call 911 using wifi is not going thru

Depends on the carrier and the carrier updates. ATT prepaid, for instance, doesn't support it. ATT Postpaid does. Cricket only with some select phones.

I have AT&T and WiFi calling worked just fine on the public release of iOS 11, however, when I did a fresh install of iOS 11.2.5 beta, WiFi calling will not enable. It says to contact AT&T to enable it when I try. Weird.

WiFi calling doesn’t work on the Tracfone (AT&T) version of StraightTalk. My iPhone 6 is on that network. I have the same settings but it just doesn’t enable because it isn’t supported.

That's correct. My Note 8 isn't supported by Cricket Wireless for WiFi Calling but my iPX is.
 
You should be able to WIFI-calling with post-Paid, but each MNVO has its quirk. I have heard blocking by phone, main-carrier, even where user's tower. Notice with WIFI calling you are still being metered, unless you have unlimited calling.
