Hi,
My employer provides me a Macbook PRO for work, which I use also for personal purposes outside the working hours. My question is: is there any app that makes me able to define different profiles for the Dock bar? Like two profiles: Business and Personal. And each one has a different list of apps!
What do you think? Do you know anything?

I'm not sure if all of that happens with what I am about to suggest. You need two User Accounts, which you set up in System Preferences>Users and Groups. Apps will be available to both accounts if they are in the main Applications folder. You can create Applications folders for each user, and only the one you're logged into will be able to use apps placed there. I'm not sure how that affects the Dock, but it might be different in each if you customize it.

Gregg2 is right. Two user accounts will do the trick. They can have different dock setups, screen backgrounds, etc. BUT…

Each user account will have its own User folder with different Documents, Pictures, Movies etc.. This is a good thing if you are wanting to keep your business and personal accounts completely separate. But it can be a nuisance if you want to share documents between the accounts. The easiest way around this is to learn to save “shared” documents, pictures, movies to the Shared folder which is accessible by all accounts.
