First off it's $700 or $600 depending on the version you get, then top that off with an extra $200 or so because it's unlocked.
You are now looking at a a bit less than $1k phone, quite the hefty price tag.
Still not answering my question, why pay that much instead of using jailbreak unlock?
Bc jailbreak is not always available when apple updates the firmware and what if you accidentally update the iphone? Also jailbreak doesn't necessarily means that the unlock will be available at same time. The unlocking of baseband 5.x.x took a while to be done, while jailbreaking was available for the longest time.
And unlocking the phone isn't always perfect. For example, i hear many people complaining (and i have experienced this too), that on their unlocked iphones using blacksn0w, they get random signal drops. Like , you would get full signals, and randomly they would just drop and say "no service" for a few secs and then get back to full signals. This could also happen when you are taking a call, which could be pretty annoying sometimes.
If you have factory unlocked iphone, all you have to do is pop any sim card in and connect to itunes, thats it. For those people who travel alot, i really recommend factory unlocked iphones. You can find one for a reasonable price on eBay. Bc now there are many countries where apple sell unlocked iphones, compared to last year or the year before when there were only a few, and the price of unlocked iphone was ridiculously high (over $1K +).

A major release by Apple is almost always available for jailbreaking within 48 hours. Issues with 05.11 baseband was a recent phenomenon, and although issues may arise in the future and jailbreak/unlock may be harder and harder to do, but at present time, jailbreak and unlock is still very much applicable.
If you fear that you may accidentally upgrade your phone, then perhaps jailbreak really isn't for you. Unlock is a software unlock, so yes there might be drop calls occasionally, but is $200-$300 premium really worth the occasional hassle?

Unlocking is easy, and can be done officially - just not in the US. I've just asked o2 to unlock my iPhone 3G and it'll be done next week.
