Yes, but performance will suffer. When you have matched pairs installed, you effectively double the throughput from the RAM to the memory controller. This really makes a difference on the MacBook due to the integrated graphics.

Replacing one of the stock sticks with a gig would be cheaper, it would allow more future expansion options, and it's faster than 2*512MB.
