It can happen... but will never be earlier that the stated release date... For example, I ordered AirTags on Friday (4/23) and got a delivery date of May 3-5. They were delivered today (04/30). But after the fiasco with iPhone 4 (2010), items purchased from Apple would never have been delivered before today (04/30) - the official "release" date. (It's also pretty unusual, but there were reports that AirTag deliveries happened yesterday for purchases through Best Buy.)
Usually, however, the date estimates are pretty accurate, especially with BTO/CTO items.
The pre-order delivery date will never be ahead of the public release date.
Case in point: iPhone launch date always held at UPS warehouse until the day of delivery/launch day.
My last pre-order thru Apple was spot on - M1 Mini launch day November 19, 2020 = day of delivery.
This current (customized) pre-order for the M1 iMac I have a window of May 21-27 which tells me that May 21 is the public launch day.
