I want to try out Catalina but am concerned it might mess up all the playlists I currently have in iTunes. Will the playlists properly sync without issues to my Xs Max running iOS 13 Beta? Thanks in advance!

I wouldn't recommend you run beta software on any of your main devices. Just because it works today doesn't mean a future beta build won't break it.
I took the leap to Catalina and am happy to report that there were no issues with switching from iTunes. All my music, playlists, syncing my Xs Max, etc. all work fine.
