I'm confused on the new MacOS Documents and Desktop iCloud sync feature.
Does it "Move" your files to iCloud and delete local files?
Or does it "Copy" your files hence, leaving files locally as well?

It depends. If you turn optimize storage off it will copy, but if you turn optimize storage on it might move files to iCloud to save space.
OK I see.
I don't plan on using the "optimize storage" feature because I have plenty of hard drive space on my iMac.

No problem. You can control the optimize storage setting in Settings -> iCloud -> iCloud Drive (at the bottom). I think it actually was on by default on my iMac so I had to turn it off.
