It's showing Pages, Numbers, and Keynote under iWork in the iCloud...but it says you can drag Office documents to the cloud and get them to work?

Is this true?

And if so how do I get this to work?

I'm dragging them over but nothing is working.
 
Click the cog on the right top corner of Docs in the Cloud. It'll have an upload option.
Uploading Office documents seem to be very buggy ATM. I'd recommend using iWork.com instead.

Can you screen shot where I'm supposed to drag the image?
 
Not yet; it'll be fixed in the future.

Ok...and another question just because you seem to know your stuff.

I want to use the cloud for everything...but I need my Gmail.

Is there anyway to just use my Gmail on my iPhone?

I don't want Google Calendars or Contacts coming over (since I have the Cloud for those) but I just want Gmail.

I thought about using iClouds Mail but I had to create a new Email @me and don't want to use that.

Can you shed any light on that please?

Go to your accounts menu in Settings on your iPhone. Go to your Gmail account and disable notes, contacts & calendars.
Then go to iCloud and disable email.
