Does restore to factory settings revert to OG iOS?

In prepping an iPad Air for sale, I want to clear all apps and restore it to factory settings.
It’s currently on iOS11, but does that revert to whatever the original version of iOS 7?

No it does not. It will restore it to iOS 11, the current version Apple is signing for that device. iOS 7 is no longer being signed for that device and can never be restored to it, regardless of the restore method.

That's what I thought...but was hoping it would revert to the original.
