The answer is simply, no, you can't boot into Low Sierra on a 2018 MacBook Pro.

You need to update the apps that won't work, if they can be updated.

It -might- be possible to install a "virtual machine" and then run Sierra within that VM...

Could you tell us exactly WHICH apps won't run for you?
