I know clicking on the restore button in itunes does not completely wipe everything off the iphone. Is there a way to get itunes to completly wipe off the iphone and return it to a virgin state? Will restoring in recovery mode do this? Thanks.

I think recovery mode will completely wipe the phone...
 
There seem to be issues where iTunes saves some preferences and puts them back on the phone after the restore. This caused assorted problems with subsequent jailbreaks. Hence the strategy of making it "new phone" as opposed to simply restoring.
 
If you're on OSX, make a new user profile, open up iTunes and restore via DFU mode and it'll be completely clean.
