Wondering what it is that I do not know about RAM that would cause my geekbench scores to improve so marginally after doubling the RAM to 8 gigs.

Am I misreading the before and afters?

Geekbench is designed to scale processor performance only. Extra ram shouldn't change much under their tests. If you want to see a big difference, go do the geekbench again in 64 bit mode.
