Currently my iPhone 5 is on 7.0.1 It is jailbroken with evad3rs since that came out.
I hear that 7.1.2 can now be jailbroken with pangu

I have one question, if I decided I didn't like it is there anyway that I can downgrade back to 7.0.1 and keep the evaders jailbreak?
I doubt il need to because a jailbreak is a jailbreak but being paranoid i like to have the option to downgrade if possible.
what precautions should I take?

7.1.2 in my opinion is the best ios 7 version releasd by Apple. I had major issues with safari, where pages constantly refreshed if I switched to something else, even if only temporarily, on both my 5s and mini retina. 7.1.2 not only fixed those major issues, but absolutely knocked it out of the park. Safari is noticeably better now for both devices. Pages hardly ever refresh now.

I read earlier today over at reddit that 7.1.1 is still being signed. Can't confirm that but if for some reason you hate 7.1.2 (I doubt it if you are already a fan of 7.x) then you might be able to install 7.1.1.

Again, I don't know if that's absolutely true. You should get confirmation before doing anything.

Pangu is completely safe. Use the latest version so there's no chance of installing the poorly written piracy software that comes packaged with the original version. People have had major issues with it so make sure you use the latest version.

but i don't really see the point since 7.1.1 and 7.1.2 are practically the same except for a few bug fixes like the mail attachments
 
7.1.2 is much more stable and have better battery life. And not to say that it will support more apps one iOS 8 comes out. I would upgrade right now before Apple patches Pangu with 7.1.3

And no, you can't downgrade back
