So I know you can’t downgrade the Apple Watch, but what happens if I’m finding iOS 13 too glitchy and want to go back to iOS 12 while the watch is on watchOS 6? Bricked? Anyone done it? Thanks

Your Watch will still work, but it won't be paired with your iPhone, so you'll lose the functions that require pairing. Just don't reset your Watch or it will be useless until your upgrade your iPhone to iOS 13.

I'm not sure what would happen if the Watch went to 0% battery and rebooted.
 
Your watch will work as a stand-alone device but things like activity data won’t sync.
At this point, you would be better off keeping using iOS 13 as your main iOS.

If the watch is just dead because of no battery, it should be fine.
