I have a quick question. I'd like to attempt to perform the MMS tutorial and install the modified carrier file to enable it.

If for some reason this screws up my phone, how can I downgrade to the previous carrier file? Will a restore do the trick?

Get the old file and do exactly what you did with the new file.
 
someone told me this but idk how to zip up the payload it would be helpful if u could tell me

1. Rename it from .ipcc to .zip
2. Unzip and open the folder Payload
3. Right click/control click on the .bundle file and hit show package contents.
4. You will find a file called Info.plist, open it in Property List Editor.
5. Under the version it should say 5.1, change that to 3.0
6. Save the file, zip up the Payloads folder, and rename it to ATT_US.ipcc
7. Option-click restore in iTunes and select that file.
8. This will replace the 5.1 version, but the phone will still have the 5.0 version that came on it

Note: It is important that you click restore not update, otherwise it wont install and older version
