I read that you could downgrade to 5.0.1 on A5 devices, can you still do that with iOS 7 installed? And I do have SHSH blobs, if you need them.

You read wrong or got bad info.
You cant even if you do have shsh blobs saved.

Starting with RedSn0w 0.9.11b1, you can now downgrade A5 devices to 5.0.1 firmware if you have your SHSH blobs saved. '

It's wrong, you cannot downgrade an A5 device - the iPhone 4s is not downgradeable.

The last device able to be downgraded is the iPhone 4.

Then why was this video made? I am confused.
Did you check the date the video was posted?

May 2012 dude. That's two years ago, before the iPhone 5 was released and probably when iOS 6 was in beta.

Apple does not authenticate iOS 7 with blobs anymore, so as Applejuiced said, it doesn't matter if you have complete blobs. And there was an issue with Cydia and iOS 6 and SHSH so you're out of luck there.

You can't expect something that was posted two years ago to still work when both Apple and the JB devs have all moved on.
