I'm about to help someone end their iCloud+ subscription, but want to ensure all content has been downloaded first.

Unfortunately I don't know all the details (which files are stored there, the individual settings etc.) and I don't fully know my way around iCloud+ either, but as far as I know this person has more or less unknowingly subscribed (Apple makes it very easy to convince people to press the "Yes" buttons), and the default settings have been used. There has been no real need for iCloud+, so now is the time to close it down.
The same person has an iPhone (13 or 14 I think) as well as a Mac (not sure which MacOS version, but a recent version), and as far as I know at least a lot of photos are stored in iCloud+ -I want these downloaded to the Mac (in Photos I presume). I don't know what else is stored there.

I basically want to download everything stored in iCloud+, download it to the Mac and change the Mac's and iPhone's settings so that the most essential files are stored locally, and use the normal free iCloud (not +) for only basic stuff like iMessage.
So how do I go about with this and ensure everything is downloaded before I end the subscription?

(PS: I've been using both Macs and iPhones for years, so I know my way around them -but am always willing to learn more of course! The above is more about ignorance concerning iCloud+).
