I know Apple recommends running one 4k monitor on each bank of USB-C ports, but due to less demand, can a pair of 1080p monitors be run off the same channel of USB-C ports, thus saving the other pair to drive an eGPU with full bandwidth?

Has anyone done this and if so, what were the results?

Yes. Note though that your eGPU is only using 22Gb/s of the 32Gb/s available over 4 PCIe 3.0 lanes. You can run a 1080p monitor on the second port of whichever controller is running the eGPU without reducing its bandwidth. For reference, I have one of the inputs of my 3440x1440 monitor connected to the other port on the controller the eGPU is connected to.

Thanks for the info!

So far, I have a Dell 27" 1080p monitor and a AKiTiO 3.1 dual storage bay running of one pair of the USB-C ports, and another Dell 27" monitor running off the other pair (just one port occupied). The last port will be occupied by an eGPU when I'm ready for the upgrade.
