Also, (since I don't know how tech savvy you are), be careful to make sure that whatever HDMI and DVI things you buy will plug into both your monitor and Mac Mini. Don't accidentally buy something that has a HDMI port (which is what your computer has on it) on it instead of an HDMI plug (which will plug into your HDMI port). Same goes for whatever DVI stuff you get.

Not at full Rez. One yes, but not two 2560x1440. Only way to run two is with at least one thunderbolt. The hdmi port is capped at 1920x1200.
Afraid that it couldn't be done and I have searched and can't find a way. There are no dual out Thunderbolt hubs or hubs with a Thunderbolt out and a DVI DL or DisplayPort. The closest thing I have found (thought it was it at first) is the Matrox DS1. However it has 2 caveats. The DVI is single link and it has no Thunderbolt out (termination only).
Exactly, the only way to run two of 2560x1440 is to use an Apple Thunderbolt Display and another 2560x1440 monitor (or a second ATD).
Thunderbolt is a daisy chain only data link so you will never find a hub. With that said, Redwood Ridge (Thunderbolt controller that was launched earlier this year and not to be confused with Thunderbolt 2 coming out late this year early next) does support Displayport 1.2 which allows for daisy chaining of Displayport monitors and/or a Displayport "hub". Unfortunately no macs currently support this (not even the new MBAs). Maybe when Mini gets refreshed with Haswell we will see a mini capable of outputting to two QHD monitors (or maybe Apple will finally allow us to use HDMI at QHD resolution as well?)......
There are devices out that will do what you describe but one is getting US sale sites set-up @ the moment and the other has bad reviews ...

As best I can tell those are not designed for QHD at all. They seem to be 1080 (and one 1024) horizontal max with a shared screen vertical resolution.

Thanks, I'm just suffering a little upgrade fever with my old early 08 8 core Mac Pro. The new Mac Pro will almost certainly be out of my price range and also overkill. The mini seems to be the ONLY option but it must support both my monitors. Was planing on waiting for the mini Haswell update anyway. We will see what happens.

If the viewsonic supports 2560x1440x40Hz, you can run it off the HDMI port using a HDMI->DVI converter included with the mini. I've done that with my EQ276W - just need switchresx to create the custom resolution/refresh
If you're doing 2D / work type stuff (or even video probably) 40 Hz should be fine... Gaming might not be great.

Very interesting. So you can get QHD over HDMI-DVI DL. Will this also work at 30Hz since that is a much more commonly supported (I assume) scan rate than 40Hz?
Depends on the monitor. My EQ276W won't go below 40Hz. My QHD270 won't do anything slower than 60Hz. But my SE39UY04 I've taken down to 13Hz (using the HDMI port on the mini), and it might even go lower (that's at 3840x2160).
Haven't tested the Viewsonic - I think my coworker has a pair, but I doubt he'd let me test with one.
I would say 30Hz isn't necessarily any easier than 40Hz - The only 30Hz I've seen on a supported resolution is for 3840x2160. You'll probably have to use for any <60Hz mode.
BTW: When I was doing some testing with a friends mac mini 2012, I got some video driver issues when I had dual monitor 2560x1440 + 3840x2160 - I'd get a huge black box around where the cursor should have been. On a single display it was fine, and on my mac mini 2011 w/ ATI 6630 I can dual monitor with that many pixels, so my suspicion is the blame is with the Intel drivers
