Can I add an Nvidia GT120 as a second GPU (mainly for the boot screen) along side my Sapphire RX480 on my 5,1 running Mojave? ?

Yes i run a 5770 and RX580. , just make sure you have them in the right slots, so bottom and top I believe.
No you can't....!
You cannot have Metal/Non-Metal cards together with Mojave.
