I have a dual SIM on an iPhone 12 running iOS 17. My contacts are divided into personal and business. When the phone rings, the screen will say either (B) or (P) in a way too small font, btw, but that's not the subject of this message. At all times of the day, I get text messages which say: "iMessage, followed by the date." Then the txt. How do I figure out if this is being texted to my personal SIM or my business SIM?

iMessage is not SMS. iMessage is separate from cellular carrier text messaging. iMessages are received and sent to your Apple ID, not your cell numbers.

Touch the person's name at the top of the screen. It will directly identify the conversation line underneath the row of icons.
