EDIT: It sounds like what you have is an Apple ID balance rather than a "Gift Card balance". If so, as
@MarkC426 (below) explained, you can't convert that to a gift card and sell it.
What about buying, say, an LG UltraFine 5K Display ($1300) from Apple's website? That might be a nice upgrade for when you are using your Mac at the desktop. Or you could buy Airpods for your family instead of whatever holiday gifts you were planning....

Here are some options. This is certainly less of a hassle than buying a new iPhone or Mac and trying to resell it, especially if you can net out about the same amount of cash. And it appears you can increase your return if you exchange it for an Amazon gift card instead of cash (assuming, of course, that you do plan to spend that much on AZ).
You won't get full value, but for some popular cards like iTunes, Target and Walmart, you can get up to 92 percent of it at sites like Cardpool and Raise.

If you have unused gift cards laying around that you're not planning on using, sell them at these sites.

Alternately, after seeing how much you could get from the above sites, you could see if you could get more than that by offering it for sale in the MacRumors marketplace. One approach would be to post something like: "I've got a $1400 Apple gift card, and can get $1200 for it from xyz.com. I'd be willing to sell it privately, splitting the difference, for $1300 firm." Saying what you can get from one of these companies would prevent people from trying to give you lowball offers.
