dumb ichat question

this is probably a really stupid question and i apologize beforehand...but how do you start an IM with someone who isnt on your buddy lisst? everytime I try to, the option for starting an IM is greyed out unless a name on my buddy list is highlighted

If you're asking how to add somebody to your contact list, just press the + button at the bottom left of your Buddy List window and add the relevant details.

If a name is in your buddy list but greyed out, it means that they are not online, so you can't start a chat with them.

I think the OP is asking how to IM somebody *without* putting them on the contact list. I think you want File->New Chat with Person...

But I use Adium, so I'm not totally sure.

Aaah! Then the File/New Chat With Person should work. Just make sure you have the appropriate security levels set

that doesnt invite them to a chatroom? just to IM them right?

I believe so, you can add more participants if you want to and have a group chat.
