So my wife and I each have our own calendars and then a family calendar that is shared with the two of us and our oldest two kids. Then each of our kids has a calendar that she created and shared with me. That way when she adds "Softball 7pm" I know which kid based on which calendar she adds it to.

The problem is when she adds events to the shared kids' calendars it "invites" me and then when I accept it adds it to my calendar so now when I look at my calendar app I see both events. Is this how it supposed to work with shared calendars?

As I recall you don't need anyone invited on events on shared calendars--they just appear on the calendar and those that the calendar is shared with just see that event basically.
