instead of ripping them with HB, you create an ISO of it, and on the apple tv, use ATVFlash and they'll appear just like a DVD would. Of course...thats the appleTV....for the iPad....no idea!!
Using HB...what you got is right...the main feature.
If you want menus you will have to use programs like RipIt or Mac The Ripper.
I personally use RipIt for my HTPC. I have never had a problem ripping a DVD with it. It works fast and usually takes about 20-25 minutes per DVD. The only problem is that the file sizes are large. An entire DVD rip will usually be 6-7 gigs in size. This will not leave room for much else on an iPad.
VLC is now available for the iPad. VLC should be able to play video_TS files(which RipIt and Mac The Ripper create). I'm not sure how to get the files on the iPad though. Maybe someone else knows the answer to that question.
Not sure why you want the menu structure, but you can use a program like DVD2oneX to compress the video TS file to about half it's size. Still going to be much larger then the movie only file from HB

I'm ripping my son's Signing Time DVD's. On the DVD they have 4 songs but to play them you need to select the songs in the menu. If I use HB it only selects the "movie" part of the dvd and not the songs.
