I respectfully wish to point out there are clear security vulnerabilities by allowing that since anyone can fake E-Mail headers and spam an image gallery if that gallery allowed uploads via E-Mail. With that being said:

If you're developing a site:
Install WordPress on your web server and get the plugin which posts emails with images onto a blog. It saves the images into it's own directory, would be nice to modify this plugin to put the images into Gallery and refrence them through links, then you don't have to worry about rewriting all the code for handling emails. But for adding comments and rotating images and so forth you'll need to include commands in the email of a strict syntax: http://www.economysizegeek.com/?page_id=395

Some folks say you can do it via Joomla 1.5 open source CMS, probably this extension.

Via your Mac as host:
Instructions for email integration into Max OS X, iPhoto, .mac and Web Gallery can be found here: http://support.apple.com/kb/HT1024

General Advice:
To see how its done commercially for ideas, visit: PhotoBucket.com

Users are allowed to upload up to 20 pictures at a time. Direct linking is allowed. Photos larger than 512 KB are automatically scaled down. It allows image uploads by mobile camera phone or via email message attachments. It also Provides 50 MB storage space 2500 MB/month bandwidth.

Other users might have other suggestions, just remember as you check out those sites/scripts make sure sensible security is in place.

while its uploading features are a little frustrating to me in the current release, I'd keep a close eye on www.indexhibit.org - very clean simple cms to organize your content, collections of photos, thoughts.... easy to install and through its many themes offers a whole variety of ways for people to view/deal with the photos you upload. If only it supported uploads via FTP rather than their webbrowser tool...

- wow, totally misread the OP comments about emailing photos to the webspace... null and void the above comment..
