How to I edit a photo on my iPhone X and save it but not replace the original?

If you mean while editing in the Photos application, you can press the share button at the bottom left (the box with an arrow pointing up out of it), then on the second row of icons, choose the duplicate option (you may need to scroll towards the end to see it). This will create a second copy of the image to work in.
