Will an EchoDot 5th generation work with macOS Catalina? If not which Echo Dot will or what will?

The EchoDot would use Google's Alexa, not supported by Apple iOS or macOS.
You can use Apple's HomePod, or Homepod mini, both of which use Apple's Siri, giving you similar functionality.
