iPhone Edit plist files without jailbreaking?

I want to edit some plist files on my phone without jailbreaking (Using OS X). I downloaded iFunBox but it doesn't seem to show the full directory of my iPhone. I don't see a system folder that people reference when altering system files or anything. Any ideas?

I tried using iExplorer, and it appears maybe I HAVE to have it jailbroken to view the system files. Bummer. Oh well.

You can't edit any plist on the device without jailbreaking
