I have 2x 6800x Duo MPX's but have two spare Sonnet 69000XT's lying around.

Does anyone know what link speed I'll get if I connect an eGPU or two to my MPX modules?

Do you mean make the 6900XT as eGPU? There is no hardware to make eGPU with MPX module.

Anyway, for 7,1, the Thunderbolt 3 ports max throughput is 40Gb/s.

Yes, stick the 6900xt in an eGPU and hookup via thunderbolt to one of the mpxs. I’d done it a while back but via the I/o card and got terrible performance. Literally didn’t make any difference to render time.

Thunderbolt 3 ports are that slow, no matter on the MPX card or on the 7,1's I/O, still just Thundebolt 3, 75% less bandwidth than the PCIe 3.0 x16 slot.

Also, eGPU support isn't that good in general. If you see no difference in rendering time, may be the software never really use the eGPU.
