I have a 2017 13" MacBook Pro and after installing the beta of Catalina, I have an eject button in my menu bar that I can't get rid of.

Obviously, my computer doesn't have an optical drive and I don't have any external drives connected, but I can't remove it because its grayed out.

Does anyone else have this problem?

Hold the Command key on your keyboard, then click and hold on the eject icon. Drag it down and off the menu bar until you see a small “x” icon appear. Then just release the mouse button and it will remove the eject icon from your menu bar.

Those things are called Menu Extras. You can rearrange or remove most of them with the command key. Some third party extras don’t behave like that and must be turned off and on through associated apps.
