if we have the wifi version and not within wifi range would it be possible to write emails then automatically send when we become in range of wifi or would you have to open up mail and send when connected to network.

I believe that it will send with the next push/update, when available.
 
I've used my iPhone in airplane mode to write up replies to emails and once I turned the wireless back on they automatically got sent. I'd imagine that it would work the same way on the iPad.
 
As noted, the iPhone/iPod touch works this way, so it's probably safe to assume the iPad will. It's one of the few times I use a local mail client (as opposed to the Gmail web client) - being a touch user, it is most often offline.
