Emoji Question

I know today’s iOS 11 update adds new Emojis. What happens if I shoot a text to someone on Android that might not have the latest Android OS, or any version for that matter? I’ve always been curious and a little confused, as I know it’s some sort of consortium consisting of a relatively small group of people. Insights?

If they have updated their OS to include the new Unicode emojis, they will be able to see them. If not, they see a ?
