I'm still on Mojave on my Mac Mini, but running Catalina 10.15.2 on my MacBook.
I run a couple of things that aren't notarised and need to be bypassed by the gatekeeper in security panel.

will i still be able to run these, and if I wipe my system, will I still be able to install them?

Yes.
Unsigned apps -> will run like before, right click -> open or in the security panel.
Apps signed before July 2019 -> will run.
Apps signed after the notarization deadline but not notarized -> You will have to manually remove the quarantine flag manually before you can run it. You should contact the developers and tell them to do their job properly. It's been a year and half.

I know how to remove quarantine flag... annoying. hope none of my apps trip.

The easiest is to right-click open and then open. They will be added to the exception list and should not bother you. All apps already there prior upgrade are excepted.
