If I buy an iPad at an online apple store and engrave it, will they unseal the package and leave the seal open when it is shipped to me or will they reseal it so that it looks like it's completely new and has never been opened?

Neither. It will be engraved before it is packaged and sealed for the first time.
I think they opened it first and then engraved it 😄Yeah, do they put their hands through the box?
Just an FYI, not sure if this matters to you or not, but they only reason they offer free engraving is because engraved devices are much harder to sell later on down the road, especially if they have really personalized engravings, because it’s within Apple’s best interest for there to be fewer used devices on the market.
