Yes, you can use and SSD as boot drive via eSATA. You can't have both, SSD and eSATA as there is only one extra SATA port
 
Well I was planning on having them hooking up an internal ssd along with the 1tb hdd that's already in there plus unhook the super drive and use that sata as an esata for an external blu Ray drive?

You are just fine with USB Blu-Ray drive as optical media is so slow. Best Blu-Ray movies have bitrate of 50Mb/s and USB 2.0 can provide up to 300Mb/s in real world
