My question is, what would occur if I don't have my iPhone 13 Pro Max anymore since I gave it to a family member, now when my new iPhone 14 Pro Max arrives, how do I activate it if I no longer have the old iPhone with me to be able to transfer the sim electronically?
 
The carrier website may have an option for you to change/update SIM card info and get an eSIM as a self-service. To make change, you still need access to your number to receive the text code to proceed to update your line and input the new phone EID for eSIM like on T-Mobile. I’m not sure if other carriers have something like that as well but you can contact them to get you set up with an eSIM.
