Even if you buy on Steam, most Mac games don't actually require Steam, aside from first-party Valve titles. You can go into the Steam folder, find the app, make an alias, and put the alias wherever you want, then use that to launch the game without Steam running. The reason for making an alias is so the game isn't really moved anywhere, so if there are any updates it can be updated properly in Steam.
