Example files to teach graphic design?

Is anyone aware of some .AI or .PSD files that I can download from somewhere that can be used to teach different aspects of graphic design -- like shape, line, color, etc.

Check out the Adobe Education Exchange. This is a community of educators supported by Adobe who post their assignments and tutorials

There are also thousands of free Adobe tutorials online with many containing Photoshop or Illustrator files for you to play around with to coincide with said tutorials. I taught myself this way and I've stumbled across a wealth of knowledge simply by searching "free Photoshop tutorials" ... etc ...
