When using the MS Exchange client is there anyway to:

A) Select All Messages

B) Empty the trash

A. Just like with your iPhone. You can select them all (one by one) not like a shortcut to select all at once.

B. You can delete your trash just like you do from your inbox. Swipe to delete or press the edit button and delete as many as you like

I guess what you are trying to say is that you can't.

Selecting one by one is ridiculous. Even on the Palm Pre you can do an empty trash. I am surprised that Apple hasn't added this function in yet.
 
They do. You just don't know how to use your device yet. Just go to the Trash folder. Hit the "edit", and there's a "delete all" button.
