I bought a 16 3G iPad on Friday and realized I most likely will never use the 3G, could I exchange it for a 32 wifi model?
 
I believe you have 14 days and they will charge you 10% restocking.
 
If you already opened it, don't bother returning it, the 10% restocking fee basically means you wouldn't really gain that much money back just to get rid of the 3G ability. Your best bet is to sell it to maximize your profits, or just keep it and save the 3G ability for a day when you might really need it (you never know). Besides, the 3G model increases resale value if you go to sell it down the road for a next gen model.
