Can anyone here share their experiences with using the AT&T international data add-ons? As in, when is a good time to add it (how far in advance) and how long should you keep the plan in place to ensure it catches all the international data?

I add the plan at the beginning of my billing period when I know I am going to be overseas and I don't delete it until the first day of the next billing period after I return.
AT&T basically pro-rates whatever you add on. So if you add a 20 MB plan 10 days before the end of your billing cycle, you get 10/30 * 20 MB or about 6.67 MB of usage. They also charge you only 1/3 of the total cost. I prefer not to mess with it and just keep the plan for the whole month. That way I know for sure what I am allowed to use.

I usually do the same thing just to be safe. Make sure you purchase enough data for your needs. I went over on my last trip to Europe and it cost me an extra $600 or so.
I recently used the Add-On and had essentially the same experience as the previous posters. I reset the iphone's data usage meter before I left and checked my bill before I dropped the service. All usage showed up on the first bill-no "left-over" charges.
I was recently in Italy and Switzerland for business. Be aware that Europe does not have a real unlimited data plan. After you pass a certain amount of data, their rates increase substantially. I even got a text message saying I surpassed my data limit (even though I added the "unlimited" data plan). Thankfully this was on business but I saw the bill and it was ridiculous. My advice is that if you intend on going to Europe with your iphone, use it judiciously. Only check emails and surf the web sparingly. Do NOT download anything. Good luck.
Worked fine for me in OZ
I bought both the $5.99 roaming plan and the 20 Mb data plan about five days before going to Australia last year.
The roaming plan paid for itself after just a few calls (didn't make many) and through judicious use of Wi-Fi (only used 3G for e-mail and a couple maps), I managed to squeeze by with 3 Mb left on the data plan.
Didn't have any erroneous charges and -- monitoring my plan online -- I saw my call history loaded almost instantaneously from Vodaphone (and a little Telstra) in Oz to my account, so I was able to cancel the second I got back without having to wait.
All in all, a pleasant experience.
