how best to minimize interference?

airport express hooked up to a wds seems to be cutting out for no apparent reason, interferenc? HOW BEST TO MINIMIZE THIS? any settings?

You're experiencing interference because so many devices e.g. other people's wireless networks, microwaves, certain cordless phones, A/V wireless transmitters/receivers all operate on the same 2.4GHz frequency.

Try changing the channel that your airport express is using - do this in Airport Admin Utility - you should hopefully be able to find a channel that won't have as much interference. and don't forget to set all the wireless base stations in your WDS to the same channel.

Follow dietcokevanilla's great advice. Then, make sure interference robustness is turned on (AirPort menu in your menu bar), it'll make your Mac's connection to the base stations more stable at the expense of some speed.

If you're still having a bit of trouble, maybe move the base stations closer together. Hopefully it won't come to this though.
