I've tried to connect my M1 Ipad pro 12.9 to 3 different screens using a Dell HDMI-USB-C dongle but all I get is screen mirroring instead of the new extended display feature on IOS 16.

Am I doing something wrong? I can't seem to find a workaround in the Display settings and have also connected my wireless Microsoft mouse to the Ipad before connecting to the screen.

Any help would be great.

You are not doing anything wrong. Extended monitor support was removed from iPadOS. It has been reintroduced in the 16.2 beta and will hopefully make its way back in the next update.
